Ingredients

  • 2 pieces Fresh tomatoes (medium-sized)
  • 1 head Garlic
  • 3 tablespoons Extra-virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 5 pieces Fresh basil leaves
  • 1 tablespoon Water (optional, to thin the dressing)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice off the top of the garlic head to expose the cloves, drizzle with 1 tablespoon of olive oil, and wrap it in aluminum foil. Roast the garlic in the preheated oven for 20 minutes or until the cloves are soft and caramelized.

Step 3

While the garlic is roasting, roughly chop the tomatoes and transfer them to a blender or food processor.

Step 4

Once the garlic is roasted and cool enough to handle, squeeze the softened cloves out of their skins and add them to the blender with the tomatoes.

Step 5

Add the remaining olive oil, red wine vinegar, honey, Dijon mustard, salt, black pepper, and basil leaves to the blender.

Blend the mixture on high speed until smooth and creamy. If the dressing is too thick for your liking, add a tablespoon of water at a time until the desired consistency is achieved.

Taste and adjust seasoning if needed, adding more salt, pepper, or vinegar according to your preference.

Transfer the dressing to a jar or airtight container and refrigerate for up to 5 days.
