Ingredients

  • 8 medium fresh tomatoes
  • 3 tablespoons extra virgin olive oil
  • 4 cloves fresh garlic, minced
  • 1 medium onion, finely chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 6 leaves fresh basil leaves, chopped
  • 0.5 teaspoon sugar (optional, to balance acidity)
  • 0.25 cup water or vegetable broth

Directions

Step 1

Bring a large pot of water to a boil. Cut small 'X' marks at the bottom of each tomato. Carefully immerse the tomatoes in the boiling water for 30-60 seconds, or until the skins start to peel away.

Step 2

Remove the tomatoes with a slotted spoon and transfer them to a bowl of ice water. Once cooled, peel off the skins and roughly chop the tomatoes. Set aside.

Step 3

Heat the olive oil in a large skillet or saucepan over medium heat. Add the chopped onion and sauté for 3-4 minutes until it becomes translucent.

Step 4

Add the minced garlic to the skillet and cook for another minute, stirring frequently to prevent burning.

Step 5

Add the chopped tomatoes to the skillet along with salt, black pepper, dried oregano, and sugar (if using). Stir to combine.

Step 6

Pour in the water or vegetable broth to prevent the sauce from becoming too thick. Bring the mixture to a gentle simmer.

Step 7

Cover the skillet with a lid and let the sauce cook on low heat for 25 minutes, stirring occasionally. Use a wooden spoon to mash the tomatoes slightly as they soften.

Step 8

Taste and adjust the seasoning if needed. Stir in the chopped fresh basil leaves right before serving for a burst of flavor.

Step 9

Serve the sauce warm over your favorite pasta. Garnish with additional basil or grated Parmesan cheese, if desired.
