Ingredients

  • 12 oz spaghetti or linguine pasta
  • 2 cups ripe cherry tomatoes
  • 1 cup fresh basil leaves

  • 3 tbsp extra virgin olive oil

  • 0.5 cup grated Parmesan cheese
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente, then drain and set aside, reserving 1/2 cup of pasta water.

While the pasta cooks, toast the pine nuts. Heat a small, dry skillet over medium heat and add the pine nuts. Stir frequently until they are golden brown and fragrant, about 3-4 minutes. Remove from the skillet and set aside.
