Ingredients

  • 4 pieces large ripe tomatoes
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 cup breadcrumbs
  • 0.5 cup Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup onion, finely chopped
  • 0.5 cup mozzarella cheese, shredded

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cut the tops off the tomatoes and gently hollow them out using a spoon. Save the tomato pulp and chop it finely. Set the shells and pulp aside.

Step 3

In a skillet over medium heat, add 1 tablespoon of olive oil. Sauté the chopped onion and minced garlic for 2-3 minutes, or until softened and fragrant.

Step 4

Add the reserved tomato pulp to the skillet and cook for another 3-4 minutes, allowing some of the moisture to evaporate.

Step 5

Remove the skillet from heat and stir in the breadcrumbs, Parmesan cheese, parsley, basil, salt, and black pepper. Mix until well combined.

Step 6

Drizzle the inside of the hollowed-out tomatoes with the remaining tablespoon of olive oil. Sprinkle with a pinch of salt, if desired.

Step 7

Fill each tomato shell with the breadcrumb mixture, pressing the filling down slightly to pack it in. Top each stuffed tomato with shredded mozzarella cheese.

Step 8

Place the stuffed tomatoes in a baking dish and bake in the preheated oven for 20-25 minutes, or until the tomatoes are tender and the cheese is melted and bubbly.

Step 9

Remove from the oven and let cool for 5 minutes before serving. Garnish with additional parsley or basil, if desired.
