  • 150 g Granulated sugar
  • 100 g Unsalted butter
  • 120 ml Fresh lemon juice
  • 2 tbsp Lemon zest
  • 3 large Eggs
  • 5 leaves Mint leaves (optional, for garnish)

Directions

Step 1

Wash and hull the strawberries. Set them aside to dry on a clean kitchen towel.

In a medium-sized heatproof bowl, whisk together the granulated sugar, fresh lemon juice, and lemon zest.

Add the eggs to the lemon mixture and whisk until fully combined.
