Ingredients

  • 12 oz spaghetti
  • 2 cups cherry or grape tomatoes
  • 1 cup fresh basil leaves
  • 3 cloves garlic cloves
  • 3 tbsp extra virgin olive oil
  • 1.5 tbsp balsamic vinegar
  • 0.5 cup Parmesan cheese
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes (optional for heat)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.

Step 2

While the pasta cooks, prepare the bruschetta topping. Halve the cherry or grape tomatoes and place them in a large mixing bowl.

Step 3

Finely chop the fresh basil leaves and add them to the bowl with the tomatoes.

Step 4

Mince the garlic cloves and add them to the bowl as well.

Step 5

Drizzle the tomatoes, basil, and garlic with extra virgin olive oil and balsamic vinegar. Sprinkle with salt, black pepper, and red pepper flakes if using. Toss gently to combine and set aside.

Step 6

Once the pasta is cooked and drained, return it to the pot or a large skillet over low heat. Add the tomato mixture and toss to coat the spaghetti evenly.

Step 7

If the pasta seems dry, add a splash of the reserved pasta water until the desired consistency is reached.

Step 8

Divide the pasta among serving bowls and garnish with freshly grated Parmesan cheese.

Step 9

Serve immediately and enjoy your Fresh Simple Bruschetta Spaghetti.
