Ingredients

  • 12 pieces Rice paper wrappers
  • 100 grams Cooked vermicelli noodles
  • 12 leaves Fresh mint leaves
  • 12 sprigs Fresh cilantro
  • 1 medium Carrot
  • 1 medium Cucumber
  • 12 pieces Large shrimp, peeled and cooked
  • 6 pieces Lettuce leaves
  • 60 grams Peanut butter
  • 1 tablespoon Soy sauce
  • 1 tablespoon Lime juice
  • 1 teaspoon Honey
  • 0.5 teaspoon Red chili flakes
  • 1 clove Garlic, minced
  • 2 tablespoons Warm water

Directions

Step 1

Prepare the vegetables by julienning the carrot and cucumber into thin strips and setting them aside.

Step 2

Halve the shrimp lengthwise, and roughly chop each lettuce leaf in half.

Step 3

Fill a large shallow dish with warm water. Dip one rice paper wrapper at a time into the water until it becomes just pliable, about 5-10 seconds, and lay it flat on a clean surface.

Step 4

Place a few pieces of carrot, cucumber, a lettuce piece, and vermicelli noodles in the center of the wrapper. Add mint and cilantro leaves on top.

Step 5

Lay two shrimp halves above the veggies in the center of the tortilla. Fold the bottom of the wrapper over the filling, then fold in the sides, rolling it tightly to the top. Repeat with remaining ingredients.

Step 6

To make the spicy peanut sauce, combine peanut butter, soy sauce, lime juice, honey, red chili flakes, garlic, and warm water in a small bowl. Stir until smooth, adjusting the consistency with more water if needed.
