Ingredients

  • 2 cups fresh lima beans
  • 6 slices bacon
  • 1 medium, finely diced onion
  • 2 cloves, minced garlic
  • 1 cup, shredded cheddar cheese
  • 2 tablespoons butter
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 4 cups (for boiling) water

Directions

Step 1

Rinse and sort the fresh lima beans, discarding any damaged beans or debris.

Step 2

In a medium saucepan, bring 4 cups of water to a boil over medium-high heat. Add the lima beans and cook for 8-10 minutes, until tender but not mushy. Drain and set aside.

While the lima beans are cooking, heat a large skillet over medium heat. Cook the bacon slices until crispy, about 4-5 minutes on each side. Remove the bacon from the skillet and place on a paper-towel-lined plate to drain. Reserve 1 tablespoon of the bacon grease in the skillet.
