Ingredients

  • 6 cups mixed salad greens
  • 1 large cucumber
  • 1 cup cherry tomatoes
  • 1 medium red bell pepper
  • 1 large carrot
  • 0.5 small red onion
  • 1 medium avocado
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Wash and dry the mixed salad greens. Place them in a large salad bowl.

Step 2

Peel the cucumber and cut it into thin slices. Add to the salad bowl.

Halve the cherry tomatoes and add to the bowl.

Rinse the red bell pepper, remove the stem and seeds, and slice it into thin strips. Add to the salad.
