Ingredients

  • 8 eggs
  • 0.25 cup whole milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1.5 cups fresh corn kernels (from about 2 ears of corn)
  • 2 green onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup smoked mozzarella cheese, shredded
  • 0.25 cup fresh basil leaves, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a medium bowl, whisk the eggs, milk, salt, and black pepper until well combined. Set aside.

Step 3

Heat the olive oil and butter in a 10-inch oven-safe skillet over medium heat.

Step 4

Add the fresh corn kernels and green onion to the skillet. Sauté for 3–4 minutes, or until the corn is tender and lightly golden.

Step 5

Add the minced garlic and sauté for an additional 1–2 minutes until fragrant. Avoid burning the garlic.

Step 6

Spread the corn mixture evenly across the skillet. Sprinkle half of the smoked mozzarella cheese and chopped basil over the mixture.

Step 7

Pour the whisked eggs evenly over the skillet ingredients. Gently shake the skillet to allow the egg mixture to settle into all the corners.

Step 8

Cook over medium heat for 4–5 minutes, or until the edges begin to set but the center is still slightly runny.

Step 9

Sprinkle the remaining smoked mozzarella cheese on top of the frittata.

Step 10

Transfer the skillet to the preheated oven and bake for 8–10 minutes, or until the frittata is fully set and the top is puffed and golden.

Step 11

Remove from the oven and let the frittata rest for 5 minutes. Sprinkle the remaining basil on top for garnish.

Step 12

Slice into wedges and serve warm. Enjoy!
