Ingredients

  • 2 cups Fresh corn kernels
  • 1 pound Green beans
  • 1.5 cups Cherry tomatoes (halved)
  • 0.5 cup Red onion (thinly sliced)
  • 0.25 cup Fresh parsley (chopped)
  • 3 tablespoons Olive oil
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Fill a medium-sized pot with water, add a pinch of salt, and bring it to a boil over high heat.

Step 2

While the water is heating, trim the ends of the green beans and cut them into 2-inch pieces.

Step 3

Once the water is boiling, add the green beans and blanch them for 3 minutes, or until they are tender-crisp and bright green.

Step 4

Drain the green beans and immediately rinse them under cold running water to stop the cooking. Set aside.

Step 5

In a large mixing bowl, combine the fresh corn kernels, blanched green beans, halved cherry tomatoes, sliced red onion, and chopped parsley.

Step 6

In a small bowl or jar, whisk together the olive oil, fresh lemon juice, Dijon mustard, honey, salt, and black pepper until the dressing is emulsified.

Step 7

Pour the dressing over the salad ingredients in the mixing bowl and toss until everything is evenly coated.

Step 8

Taste the salad and adjust seasoning with more salt or pepper, if needed.

Step 9

Let the salad rest for 10-15 minutes to allow the flavors to meld, then serve immediately or refrigerate until ready to serve.
