  • 1 cup (fresh, canned, or thawed frozen) Corn kernels
  • 2 medium, diced Roma tomatoes
  • 0.5 medium, finely chopped Red onion
  • 0.25 cup, chopped Cilantro
  • 1 small, finely diced (optional) Jalapeño
  • 2 tablespoons Lime juice
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon (or to taste) Salt
  • 0.25 teaspoon (or to taste) Black pepper

Directions

In a large mixing bowl, add the drained and rinsed black beans and corn kernels.

Step 2

Dice the Roma tomatoes into small, bite-sized pieces and finely chop the red onion. Add them to the mixing bowl.

Step 3

Finely chop the cilantro and, if using, dice the jalapeño pepper. Add both to the bowl.

Step 4

In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and black pepper to create the dressing.

Pour the dressing over the salsa mixture and gently toss everything together until well combined.

Step 6

Taste and adjust the seasoning with additional salt, lime juice, or pepper if needed.

Step 7

Let the salsa sit for at least 10 minutes to allow the flavors to meld together before serving.

Step 8

Serve with tortilla chips, as a topping for tacos, or as a side dish. Store leftovers in an airtight container in the refrigerator for up to 3 days.
