Ingredients

  • 4 pieces medium-sized beets
  • 2 tablespoons olive oil

  • 100 grams feta cheese, crumbled
  • 50 grams walnuts, toasted
  • 2 tablespoons fresh parsley, chopped
  • 0.5 pieces small red onion, thinly sliced
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon lemon juice

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Wash and trim the beets, leaving about an inch of the stem to avoid excessive color bleeding.

Wrap each beet individually in aluminum foil and place them on a baking sheet.

Roast in the oven for 40-45 minutes or until a knife easily pierces through.
