Ingredients

  • 1.5 cups all-purpose flour
  • 0.75 cups granulated sugar
  • 0.25 cups light brown sugar
  • 1.5 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 0.25 teaspoons salt
  • 6 tablespoons unsalted butter, melted
  • 0.5 cups whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups apples, peeled, cored, and diced
  • 0.25 cups rolled oats
  • 2 tablespoons powdered sugar (optional, for topping)

Directions

Step 1

Grease the inside of your crock pot with nonstick cooking spray or a thin layer of butter.

Step 2

In a large mixing bowl, combine the all-purpose flour, granulated sugar, light brown sugar, baking powder, 1 teaspoon of ground cinnamon, and salt. Mix until well combined.

Step 3

In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract until smooth.

Step 4

Gradually add the wet ingredients to the dry ingredients, stirring until combined. Do not overmix.

Step 5

Fold the diced apples into the batter until evenly distributed.

Step 6

Pour the batter into the greased crock pot and spread it into an even layer.

Step 7

In a small bowl, mix the remaining 1 teaspoon of ground cinnamon with the rolled oats. Sprinkle this mixture evenly over the batter.

Step 8

Place a clean kitchen towel under the crock pot lid to catch condensation, then cover the crock pot.

Step 9

Cook on the low setting for 2 hours and 20 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 10

Once done, turn off the crock pot and let the cake cool for 10-15 minutes before carefully removing it. If serving directly from the crock pot, scoop portions out gently with a spoon.

Step 11

Optional: Dust the top of the cake with powdered sugar before serving.
