Ingredients

  • 250 grams fresh cherry tomatoes
  • 100 grams sun-dried tomatoes (in oil)
  • 50 grams Parmesan cheese (shaved)
  • 100 grams baby arugula
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 10 leaves fresh basil leaves
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Wash the cherry tomatoes and cut them in half. Place them in a large salad bowl.

Step 2

Drain the sun-dried tomatoes from their oil and pat them dry with a paper towel. Slice them thinly and add to the bowl with the cherry tomatoes.

Step 3

Add the baby arugula to the salad bowl and toss gently to combine.
