Ingredients

  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon Dijon mustard
  • 2 tablespoons red wine vinegar
  • 3 tablespoons extra virgin olive oil
  • 0.25 teaspoon black pepper
  • 1 teaspoon lemon juice (optional)

Directions

Step 1

Rinse the rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, combine 1 cup of rice, 2 cups of water, and 1/2 teaspoon of salt. Bring to a boil over medium-high heat.

Reduce the heat to low, cover, and let the rice simmer for 15-20 minutes, or until the water is absorbed and the rice is tender.
