Ingredients

  • 4 pieces tilapia fillets
  • 1 medium, sliced red bell pepper
  • 1 medium, sliced yellow bell pepper
  • 1 medium, sliced green bell pepper
  • 1 medium, sliced yellow onion
  • 3 tablespoons olive oil
  • 2 minced garlic cloves
  • 0.25 cup white wine
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon dried Herbes de Provence
  • 1 medium, juiced lemon
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped parsley

Directions

Step 1

Pat the tilapia fillets dry with paper towels and season both sides with salt and black pepper.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the tilapia fillets. Sear for 3-4 minutes on each side until lightly golden and cooked through. Remove the fillets from the skillet and set aside on a plate.

In the same skillet, add the remaining 1 tablespoon of olive oil, along with the sliced red, yellow, and green bell peppers and the yellow onion. Sauté for 5-7 minutes until the vegetables are softened and slightly caramelized.
