  • 2 eggplants
  • 4 roma tomatoes
  • 1 large yellow onion
  • 3 garlic cloves
  • 4 tablespoons olive oil

  • 0.5 cup breadcrumb
  • 0.5 cup parmesan cheese (grated)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 6 fresh basil leaves

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the eggplants and tomatoes into 1/4-inch thick rounds. Set them aside.

Step 3

Peel and finely slice the onion and garlic.

Heat 2 tablespoons of olive oil in a skillet over medium heat, then sauté the onions until translucent, about 5 minutes.
