Ingredients

  • 1.5 lbs Baby potatoes (Yukon Gold or red-skinned)

  • 2 tbsp Fresh chives (chopped)
  • 2 tbsp Capers (drained and rinsed)
  • 0.25 tsp Freshly ground black pepper

Directions

Step 1

Wash the potatoes thoroughly and place them in a large pot. Add enough water to cover the potatoes and add 2 teaspoons of salt.

Bring the pot to a boil over medium-high heat. Reduce to a simmer and cook the potatoes until they are fork-tender, about 15-20 minutes. Drain and set aside to cool slightly.
