Ingredients

  • 4 tablespoons unsalted butter
  • 4 large yellow onions
  • 1 teaspoon sugar
  • 1 teaspoon fresh thyme leaves
  • 1 garlic bulb
  • 2 teaspoons olive oil
  • 4 cups beef broth
  • 0.5 cup dry white wine
  • 2 teaspoons Worcestershire sauce
  • 4 baguette or French rolls
  • 1 pound thinly sliced roast beef
  • 8 slices Gruyère or Swiss cheese
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel off the loose outer layers of the garlic bulb, leaving the cloves intact. Slice off the top 1/4 inch of the garlic bulb to expose the tops of the cloves. Drizzle with 1 teaspoon of olive oil, wrap in aluminum foil, and roast for 35-40 minutes, or until the cloves are golden and soft. Set aside.

Step 3

While the garlic roasts, melt 2 tablespoons of butter in a large skillet over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring frequently, for 15 minutes.

Step 4

Sprinkle the onions with the sugar and thyme, then continue to cook for another 15-20 minutes, stirring occasionally, until the onions are deeply caramelized. Remove from heat and set aside.

Step 5

In a medium saucepan, bring the beef broth, white wine, Worcestershire sauce, and the roasted garlic cloves (squeezed out of their skins) to a simmer. Use a fork to mash the roasted garlic into the liquid. Season with salt and black pepper to taste. Simmer for 10 minutes and then strain the mixture to create a smooth au jus. Keep warm.

Step 6

Slice the baguette or rolls in half lengthwise. Spread the remaining butter on the cut sides of the bread and toast in the oven at 400°F for 5-7 minutes, or until golden.

Step 7

Layer the bottom halves of the bread with caramelized onions, roast beef slices, and Gruyère or Swiss cheese. Place on a baking sheet and return to the oven for 5 minutes, or until the cheese is melted.

Step 8

Top the sandwiches with the other bread halves, slice in half, and serve warm with the roasted garlic au jus on the side for dipping.
