  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 large yellow onions
  • 1 teaspoon granulated sugar
  • 1 tablespoon balsamic vinegar
  • 6 slices thick-cut bacon
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons all-purpose flour
  • 1 sheet pre-made puff pastry sheet
  • 1 cup gruyere cheese, shredded
  • 1 large egg
  • 2 tablespoons heavy cream
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

In a large skillet, melt the butter and olive oil over medium heat.

Step 3

Slice the onions into thin half-moons and add them to the skillet. Cook for 15-20 minutes, stirring occasionally, until the onions are soft and golden.

Sprinkle the sugar over the onions and continue to cook for another 5 minutes to caramelize. Stir in the balsamic vinegar and cook for 2 additional minutes. Remove from heat and set aside.

In a separate skillet, cook the bacon slices over medium heat until crispy. Remove and place on a paper towel-lined plate, then chop into small pieces.
