  • 10 ft Sausage casings (optional)
  • 1 cup Couscous
  • 1.25 cup Chicken or vegetable stock
  • 1 tbsp Chopped fresh mint
  • 1 cup Plain Greek yogurt
  • 1 tbsp Fresh lemon juice
  • 2 tbsp Olive oil
  • 1 tsp Salt (for couscous)
  • 4 units Optional garnish: lemon wedges

Directions

Step 1

In a large bowl, combine ground lamb, ground beef, harissa paste, paprika, ground coriander, ground cumin, cayenne pepper, salt, minced garlic, and chopped fresh herbs (cilantro and parsley). Mix thoroughly using clean hands until the spices and herbs are evenly combined.

Step 2

If using sausage casings, soak them in warm water for 20 minutes to soften. Rinse the casings thoroughly and stuff them with the sausage mixture using a sausage stuffer according to manufacturer's instructions. Twist the casings into preferred sausage lengths.
