  • 2 pounds fresh mussels
  • 2 tablespoons unsalted butter

  • 1 cup dry white wine

  • 0.25 cup heavy cream
  • 3 sprigs fresh thyme
  • 3 tablespoons, chopped fresh parsley
  • 1 bay leaf
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 loaf, for serving baguette or crusty bread

Directions

Step 1

Clean and debeard the mussels. Discard any with cracked shells or those that don’t close when tapped.

Step 2

In a large pot or Dutch oven, melt the butter with the olive oil over medium heat.

Add the diced onion and cook for 3-4 minutes until softened and translucent.

Add the minced garlic and cook for 1 minute, stirring frequently, until fragrant.

Pour in the white wine and chicken or seafood stock. Add the thyme sprigs, bay leaf, salt, and black pepper. Bring the mixture to a simmer.
