  • 6 pieces Boneless, skinless chicken thighs
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, thinly sliced
  • 3 cloves Garlic cloves, minced
  • 0.5 cup Balsamic vinegar
  • 0.5 cup Chicken broth
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 teaspoons Cornstarch
  • 2 tablespoons Water
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a skillet over medium-high heat.

Step 2

Season the chicken thighs with salt and black pepper on both sides.

Step 3

Sear the chicken thighs in the hot skillet for 2-3 minutes per side until golden brown. Do not cook through. Remove from skillet and set aside.

In the same skillet, add the sliced onion and minced garlic. Sauté for 3-4 minutes until softened and aromatic.

Transfer the seared chicken thighs and onion-garlic mixture to the crock pot.
