Ingredients

  • 2 cups All-purpose flour
  • 2 cups Granulated sugar
  • 2 teaspoons Baking soda
  • 2 teaspoons Ground cinnamon
  • 0.5 teaspoons Salt
  • 1 cup Vegetable oil
  • 4 Large eggs
  • 2 teaspoons Vanilla extract
  • 3 cups Carrots, finely grated
  • 1 cup Pineapple, crushed and drained
  • 1 cup Pecans or walnuts, chopped
  • 8 ounces Cream cheese, softened
  • 0.5 cup Unsalted butter, softened
  • 4 cups Powdered sugar
  • 1 teaspoon Vanilla extract (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or one 9x13-inch rectangular pan.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.

Step 3

In a separate bowl, beat together the vegetable oil, eggs, and vanilla extract until well combined.

Step 4

Gradually add the wet ingredients to the dry ingredients, mixing just until combined.

Step 5

Fold in the grated carrots, crushed pineapple, and chopped nuts until evenly distributed.

Step 6

Pour the batter evenly into the prepared pans, smoothing the top with a spatula.

Step 7

Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, transfer them to wire racks to cool completely.

Step 9

While the cake cools, prepare the frosting: In a large bowl, beat the cream cheese and butter together until smooth and fluffy.

Step 10

Add the powdered sugar, one cup at a time, beating well after each addition.

Step 11

Stir in the vanilla extract and continue beating until the frosting is smooth and spreadable.

Step 12

Once the cakes are completely cooled, spread a layer of frosting on top of one cake layer. Place the second layer on top and frost the top and sides of the cake.

Step 13

If using a 9x13-inch cake, spread the frosting evenly over the top of the cake.

Step 14

Decorate with additional chopped nuts or grated carrot if desired. Slice, serve, and enjoy!
