Ingredients

  • 4 pieces Large artichokes
  • 1 piece Lemon
  • 2 cups Breadcrumbs
  • 1 cup Grated Parmesan cheese
  • 0.5 cup Grated Pecorino Romano cheese
  • 0.25 cup Fresh parsley, chopped
  • 4 cloves Garlic, minced
  • 0.5 cup Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 cups Chicken broth

Directions

Step 1

Trim the top inch of each artichoke and snip off the sharp tips of the leaves. Remove the stem and peel the tough outer layers. Slice the lemon in half and rub the cut areas of the artichokes with the lemon to prevent browning.

Step 2

Use a spoon to gently scoop out the fuzzy choke from the center of the artichokes. Be careful not to damage the heart at the base.

Step 3

In a mixing bowl, combine the breadcrumbs, Parmesan cheese, Pecorino Romano cheese, parsley, minced garlic, olive oil, salt, and black pepper. Mix until the ingredients are evenly combined and slightly damp from the olive oil.

Step 4

Gently spread the leaves of each artichoke and stuff the breadcrumb mixture between the layers to fill them generously.

Step 5

Place the stuffed artichokes upright in a large pot or deep baking dish. Add chicken broth to the pot, ensuring the liquid reaches about an inch up the sides of the artichokes.

Step 6

Cover the pot or dish with a lid or aluminum foil and place over medium heat. Allow the artichokes to steam for 45-60 minutes, or until the leaves are tender and easy to pull away.

Step 7

Remove the artichokes from the heat and let them cool slightly. Serve warm with a drizzle of olive oil or an extra sprinkle of Parmesan cheese, if desired.
