Ingredients

  • 1 lb ground beef (85% lean)
  • 0.5 lb ground pork
  • 0.5 cup breadcrumbs
  • 0.25 cup parmesan cheese, grated
  • 1 large egg
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 1 medium yellow onion, finely chopped
  • 28 oz canned crushed tomatoes
  • 2 tbsp tomato paste
  • 1 cup chicken or beef broth
  • 2 tbsp fresh parsley, chopped (optional, for garnish)
  • 1 lb spaghetti or pasta of choice

Directions

Step 1

In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, grated parmesan, egg, 1 minced garlic clove, oregano, basil, 1 teaspoon salt, and 1/4 teaspoon black pepper. Mix gently until just combined; do not overmix.

Step 2

Using your hands or a scoop, roll the meat mixture into small balls, about 1.5 inches in diameter, and set aside on a tray or plate.

Step 3

Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium heat. Add the meatballs in batches, cooking until they are browned on all sides (they do not need to be fully cooked through). Remove the browned meatballs from the skillet and set aside.

Step 4

In the same skillet, add the remaining tablespoon of olive oil. Reduce the heat to medium and sauté the chopped onion for 3-4 minutes until softened and translucent. Add the remaining minced garlic and cook for 1 more minute.

Step 5

Stir in the crushed tomatoes, tomato paste, and chicken (or beef) broth, scraping up any browned bits from the bottom of the skillet. Season with the remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Bring the sauce to a gentle simmer.

Step 6

Carefully return the meatballs to the sauce, ensuring they are submerged. Lower the heat to maintain a gentle simmer, cover, and cook for 25-30 minutes, stirring occasionally.

Step 7

Meanwhile, cook the spaghetti or pasta of your choice according to package instructions. Drain and set aside, reserving a small amount of pasta water if desired to adjust the sauce consistency later.

Step 8

Once the meatballs are fully cooked and the sauce has thickened, taste and adjust seasoning if needed. Serve the meatballs and sauce over the cooked pasta, garnished with fresh parsley and additional grated parmesan if desired.
