Ingredients

  • 1.5 cups Yellow cornmeal
  • 0.5 cups All-purpose flour
  • 1 tablespoon Granulated sugar
  • 1 teaspoon Kosher salt
  • 1 teaspoon Baking powder
  • 0.5 teaspoons Baking soda
  • 2 cups Buttermilk
  • 2 large Eggs
  • 4 tablespoons Unsalted butter, melted
  • 2 tablespoons Bacon drippings or vegetable oil
  • 0.5 cups Optional: Fresh corn kernels
  • 1 Optional: Jalapeños, diced

Directions

Step 1

Preheat your oven to 425°F (220°C). Place a 10-inch cast iron skillet in the oven to heat while you prepare the batter.

Step 2

In a large mixing bowl, whisk together the cornmeal, flour, sugar, salt, baking powder, and baking soda.

Step 3

In a separate bowl, whisk together the buttermilk and eggs until well combined.

Step 4

Gradually pour the wet ingredients into the dry ingredients, stirring just until combined. Do not overmix.

Step 5

Gently fold in the melted butter. If using, add the fresh corn kernels and diced jalapeños at this point.

Step 6

Carefully remove the hot skillet from the oven and add the bacon drippings or vegetable oil, swirling to coat the bottom and sides of the pan.

Step 7

Pour the batter into the hot skillet, spreading it evenly with a spatula. The sizzling sound will ensure a crispy crust.

Step 8

Return the skillet to the oven and bake for 20-25 minutes, or until the corn bread is golden brown and a toothpick inserted into the center comes out clean.

Step 9

Remove the skillet from the oven and allow the corn bread to cool for 5-10 minutes before slicing into wedges and serving warm.
