Ingredients

  • 300 grams Arborio rice
  • 200 grams Fresh or frozen peas
  • 1 liter Vegetable broth
  • 1 medium Yellow onion, finely chopped
  • 2 tablespoons Olive oil
  • 20 grams Unsalted butter
  • 50 grams Parmesan cheese, grated
  • 1 tablespoon Flat-leaf parsley, chopped (optional for garnish)
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Heat the vegetable broth in a saucepan over low heat, keeping it warm during the cooking process.

Step 2

In a large saucepan or deep skillet, heat the olive oil over medium heat. Add the finely chopped yellow onion and sauté for 5-7 minutes until softened and translucent.

Step 3

Add the Arborio rice to the saucepan and stir well to coat the grains in the oil, toasting them for about 2 minutes until they are slightly translucent around the edges.

Step 4

Begin adding the warm vegetable broth one ladleful at a time, stirring continuously to allow the rice to absorb the liquid before adding more. This process should take around 18-20 minutes.

Step 5

When the rice is halfway cooked (after about 10 minutes), stir in the peas. Continue adding broth and stirring until the rice is creamy and tender yet still slightly al dente.

Step 6

Once the rice has reached the desired consistency, remove the saucepan from the heat. Stir in the butter and grated Parmesan cheese until melted and well incorporated. Season with salt and black pepper to taste.

Step 7

Allow the dish to rest for 2-3 minutes, then serve warm, garnished with chopped parsley if desired.
