Ingredients

  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter, melted and slightly cooled
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 0.5 cup milk
  • 2 cups apples, peeled, cored, and diced (about 2 medium apples)
  • 1 cup light brown sugar
  • 4 tablespoons unsalted butter for caramel sauce
  • 0.5 cup heavy cream
  • 1 teaspoon vanilla extract for caramel sauce
  • 1 pinch salt for caramel sauce (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Step 2

In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. Set aside.

Step 3

In a large mixing bowl, beat together the granulated sugar and melted butter until smooth. Add the eggs and vanilla extract, and mix until fully combined.

Step 4

Stir in the milk alternately with the dry ingredient mixture, starting and ending with the dry ingredients. Mix just until combined; do not overmix.

Step 5

Fold in the diced apples gently with a spatula until evenly distributed throughout the batter.

Step 6

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 7

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

While the cake is baking, prepare the caramel sauce. In a small saucepan over medium heat, melt the butter. Stir in the light brown sugar and cook for 2-3 minutes until the mixture begins to bubble.

Step 9

Slowly whisk in the heavy cream until smooth, and bring the mixture to a gentle simmer. Continue cooking for 3-4 minutes, stirring occasionally, until slightly thickened.

Step 10

Remove the caramel sauce from the heat and stir in the vanilla extract and a pinch of salt (if desired). Let it cool slightly before serving.

Step 11

Once the cake is done baking, allow it to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Step 12

To serve, slice the cake and drizzle each slice with the warm caramel sauce. Enjoy!
