Ingredients

  • 2 cups long-grain basmati rice
  • 3 cups water
  • 1 cup dried apricots
  • 2 tablespoons unsalted butter
  • 1 small yellow onion
  • 1 piece cinnamon stick
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground cardamom
  • 1 teaspoon salt
  • 0.25 cup sliced almonds
  • 2 tablespoons fresh parsley

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. This removes excess starch and prevents clumping during cooking.

Step 2

Chop the dried apricots into small, bite-sized pieces and set aside.

Step 3

Finely dice the yellow onion and set aside.

Step 4

In a medium saucepan, melt the butter over medium heat. Add the onion and sauté for 3-4 minutes until soft and translucent.

Step 5

Stir in the cinnamon stick, ground cumin, ground cardamom, and salt. Sauté for 1 minute to toast the spices and release their aroma.

Step 6

Add the dried apricots and rice to the saucepan, stirring to coat the grains in the butter and spices.

Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan with a lid, and let it simmer for 15-18 minutes until the rice is tender and the liquid is absorbed.

While the rice cooks, toast the sliced almonds in a dry skillet over medium heat for 2-3 minutes until golden and fragrant. Be careful not to burn them.
