Ingredients

  • 12 pieces White button mushrooms
  • 4 ounces Cream cheese
  • 1 cup Mozzarella cheese, shredded
  • 0.25 cup Parmesan cheese, grated
  • 2 tablespoons Gorgonzola cheese, crumbled
  • 2 cloves Garlic, minced
  • 1 tablespoon Fresh parsley, chopped
  • 2 tablespoons Olive oil
  • 0.25 teaspoon Salt
  • 0.125 teaspoon Black pepper
  • 0.25 cup Panko breadcrumbs

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Gently clean the mushrooms with a damp paper towel, removing any debris, and carefully twist out the stems. Reserve the stems for later use.

Step 3

Finely chop the mushroom stems.

Step 4

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped mushroom stems and minced garlic. Sauté for 3-4 minutes until softened, then remove from heat.

Step 5

In a mixing bowl, combine the cream cheese, mozzarella cheese, Parmesan cheese, Gorgonzola cheese, sautéed mushroom stems, parsley, salt, and black pepper. Mix well until smooth and evenly combined.

Step 6

Brush the mushroom caps lightly with the remaining olive oil and place them on a baking sheet, cavity side up.

Step 7

Stuff each mushroom cap with the cheese mixture, filling them generously but not overflowing.

Step 8

Sprinkle the tops of the stuffed mushrooms with the Panko breadcrumbs for added crunch.

Step 9

Bake in the preheated oven for 18-20 minutes, or until the mushrooms are tender and the filling is bubbly and golden brown.

Step 10

Remove from the oven, let cool for a minute or two, and garnish with additional parsley, if desired. Serve warm and enjoy!
