Ingredients

  • 16 oz elbow macaroni
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese
  • 1 cup gruyere cheese
  • 0.5 cup parmesan cheese
  • 1 cup mozzarella cheese
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.75 cup breadcrumbs
  • 1 tbsp olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

Step 3

In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour to form a roux and cook for 1-2 minutes, stirring constantly.

Step 4

Gradually whisk in the milk and heavy cream until smooth. Simmer for 4-5 minutes, stirring continuously, until the mixture begins to thicken.

Step 5

Lower the heat and stir in the cheddar, gruyere, parmesan, and mozzarella cheeses, reserving a small amount of each cheese for topping. Stir until the cheeses are fully melted and the sauce is creamy.

Step 6

Season the cheese sauce with salt, black pepper, and paprika.

Step 7

Add the cooked macaroni to the cheese sauce, stirring well to coat the pasta evenly.

Step 8

Transfer the mac and cheese mixture to a greased 9x13-inch baking dish.

Step 9

In a small bowl, mix the breadcrumbs with olive oil until evenly coated. Sprinkle the breadcrumbs and the reserved cheeses over the top of the mac and cheese.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.

Step 11

Remove from the oven and let cool for 5 minutes before serving. Enjoy!
