  • 3 medium potatoes

  • 4 cups beef broth
  • 1 cup red wine
  • 2 tablespoons olive oil
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons parsley

Directions

Step 1

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

Step 2

Season the beef chuck roast with salt and pepper, then lightly dredge it in the all-purpose flour.

Step 3

Sear the beef in the hot skillet for 3-4 minutes on each side until a golden crust forms. Remove from the skillet and transfer to a large slow cooker or Dutch oven.
