Ingredients

  • 1 lb Ground beef
  • 0.5 lb Ground pork
  • 0.5 cup Breadcrumbs
  • 1 large Egg
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 2 tablespoons Soy sauce
  • 2 stalks Green onions, finely chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Vegetable oil
  • 0.5 cup Ketchup
  • 0.25 cup Rice vinegar
  • 0.25 cup Brown sugar
  • 0.5 cup Pineapple juice
  • 1.5 tablespoons Cornstarch
  • 2 tablespoons Water
  • 1 medium Red bell pepper, chopped
  • 1 medium Green bell pepper, chopped

Directions

Step 1

In a large bowl, combine the ground beef, ground pork, breadcrumbs, egg, minced garlic, grated ginger, soy sauce, finely chopped green onions, salt, and pepper. Mix until well combined.

Step 2

Form the mixture into 1-inch meatballs and place them on a plate or baking sheet.

Step 3

Heat the vegetable oil in a large skillet or wok over medium heat.

Step 4

Cook the meatballs in batches, turning occasionally, until they are browned on all sides and fully cooked through, about 8-10 minutes. Remove the meatballs and set aside.

Step 5

In the same skillet, combine ketchup, rice vinegar, brown sugar, and pineapple juice. Stir well and bring the mixture to a simmer.

Step 6

In a small bowl, mix the cornstarch and water to create a slurry.

Step 7

Slowly pour the cornstarch slurry into the sauce, stirring constantly, until the sauce thickens, about 2-3 minutes.

Step 8

Add the chopped red and green bell peppers to the sauce and cook for an additional 3-4 minutes, or until they are slightly softened.

Step 9

Return the meatballs to the skillet and stir to coat them in the sauce. Simmer for 3-4 minutes to ensure the meatballs are warmed through.

Step 10

Serve the sweet and sour meatballs hot over steamed rice or noodles, garnished with additional chopped green onions if desired.
