Ingredients

  • 8 large eggs
  • 0.25 cups milk
  • 2 tablespoons olive oil
  • 1 medium, finely chopped onion
  • 2 cloves, minced garlic
  • 4 cups, loosely packed fresh spinach
  • 0.5 cups, crumbled feta cheese
  • 2 tablespoons, chopped fresh tarragon
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a medium bowl, whisk together the eggs and milk until well combined. Season with salt and pepper, then set aside.

Step 3

Heat the olive oil in a large oven-safe skillet over medium heat. Add the chopped onion and cook for 3-4 minutes until soft and translucent.

Step 4

Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 5

Add the fresh spinach to the skillet and cook, stirring frequently, until the spinach has wilted (about 2-3 minutes).

Step 6

Spread the cooked spinach mixture evenly across the bottom of the skillet and sprinkle the crumbled feta cheese and chopped tarragon over the top.

Step 7

Pour the egg mixture evenly over the spinach and cheese. Let it cook on the stovetop for 2-3 minutes, gently lifting the edges with a spatula to allow the uncooked egg to flow underneath.

Step 8

Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the frittata is set and lightly golden on top.

Step 9

Remove the skillet from the oven and let the frittata cool for a few minutes. Slice into wedges and serve warm.
