Ingredients

  • 4 pieces Chicken breasts
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 8 pieces Fresh sage leaves
  • 4 slices Prosciutto
  • 0.25 cups All-purpose flour
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 0.5 cups Dry white wine
  • 0.5 cups Chicken broth
  • 1 tablespoon Lemon juice
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet to pound each piece to an even thickness of about 1/4 inch.

Step 2

Season both sides of the chicken breasts with salt and black pepper.

Step 3

Place two fresh sage leaves on top of each chicken breast, then cover with a slice of prosciutto. Lightly press the prosciutto down so it adheres to the chicken.

Step 4

Sprinkle the all-purpose flour onto a plate and lightly dredge each piece of chicken in the flour, shaking off any excess.

Step 5

Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, add the chicken breasts, prosciutto side down, and cook for 2-3 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 6

Reduce the heat to medium-low, and add the unsalted butter to the skillet. Once melted, stir in the dry white wine, scraping up any browned bits from the bottom of the pan.

Step 7

Add the chicken broth and lemon juice to the skillet. Simmer the sauce for 3-5 minutes, or until slightly reduced.

Step 8

Return the chicken to the skillet, spooning the sauce over the top. Let it cook for an additional 1-2 minutes to warm through.

Step 9

Transfer the chicken to serving plates and spoon the sauce over each piece. Garnish with fresh parsley, if desired.

Step 10

Serve immediately, paired with a side of your choice, such as roasted vegetables or mashed potatoes.
