Ingredients

  • 4 pieces Chicken or turkey cutlets
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup All-purpose flour
  • 3 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 cloves Garlic cloves, minced
  • 0.25 cup Balsamic vinegar
  • 0.5 cup Chicken broth
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Lemon juice (optional)

Directions

Step 1

Season the chicken or turkey cutlets with salt and black pepper on both sides.

Step 2

Dredge the cutlets lightly in the flour, shaking off any excess.

Step 3

In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat.

Step 4

Add the cutlets to the skillet, cooking in batches if necessary to avoid overcrowding. Sear each side for 2-3 minutes until golden brown and cooked through. Remove the cutlets from the skillet and set aside on a plate.

Step 5

In the same skillet, add the remaining 1 tablespoon of olive oil and 1 tablespoon of butter. Stir in the minced garlic and cook for about 1 minute until fragrant but not browned.

Step 6

Deglaze the skillet by pouring in the balsamic vinegar, stirring to scrape up any brown bits from the bottom of the pan.

Step 7

Add the chicken broth to the skillet and bring the mixture to a simmer. Allow the sauce to cook for 3-4 minutes, reducing slightly.

Step 8

Stir in the chopped parsley and thyme. If using, add a splash of lemon juice for brightness.

Step 9

Return the cutlets to the skillet, spooning the sauce over them. Cook for an additional 2-3 minutes to warm through.

Step 10

Serve the cutlets hot, drizzled with the balsamic sauce, alongside your favorite sides like mashed potatoes, rice, or a fresh green salad.
