Squeeze the cabbage tightly in a clean kitchen towel or cheesecloth to remove as much water as possible. Set aside.
In a large bowl, combine the ground pork, squeezed cabbage, green onions, ginger, soy sauce, sesame oil, Shaoxing wine, white pepper, and an additional pinch of salt. Mix thoroughly until the filling becomes sticky and well combined.
