  • 3 large Russet potatoes, peeled and diced into 1-inch cubes
  • 3 stalks Celery stalks, sliced into 1-inch pieces
  • 2 tablespoons Tomato paste
  • 4 cups Beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dried thyme
  • 1 leaf Bay leaf
  • 1 cup Frozen peas (optional)
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

In a large bowl, toss the beef stew meat with flour, salt, and pepper until evenly coated.

Step 2

Heat olive oil in a large skillet over medium-high heat. Add the coated beef in batches and sear for 2-3 minutes on each side until browned. Transfer the browned beef to the crock pot.
