Ingredients

  • 2 pounds Ground beef (80/20 blend)
  • 1 pound Ground pork
  • 1 medium Yellow onion, finely diced
  • 3 cloves Cloves of garlic, minced
  • 1 cup Breadcrumbs
  • 0.5 cup Whole milk
  • 2 large Eggs
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup Dry red wine
  • 2 tablespoons Tomato paste
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper, freshly ground
  • 1 teaspoon Dried thyme
  • 1 teaspoon Smoked paprika
  • 0.5 cup Ketchup
  • 2 tablespoons Brown sugar
  • 1 tablespoon Worcestershire sauce

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large mixing bowl, combine the breadcrumbs and milk. Let the mixture sit for 5 minutes to allow the breadcrumbs to soak up the milk.

Step 3

Add the ground beef, ground pork, diced onion, minced garlic, eggs, grated Parmesan, tomato paste, red wine, salt, pepper, thyme, and smoked paprika to the bowl. Mix everything together thoroughly with your hands, but do not overwork the meat to maintain tenderness.

Step 4

Transfer the meat mixture to a large baking dish or loaf pan, shaping it into a loaf approximately 9x5 inches.

Step 5

In a small bowl, whisk together the ketchup, brown sugar, and Worcestershire sauce to create the glaze.

Step 6

Spread the glaze evenly over the top of the meatloaf.

Step 7

Place the meatloaf in the preheated oven and bake for approximately 60 minutes, or until the internal temperature reaches 160°F (71°C).

Step 8

Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.

Step 9

Serve the meatloaf with your favorite sides, such as mashed potatoes or roasted vegetables, and enjoy it with a glass of red wine for a complete, unapologetic meal.
