Ingredients

  • 8 tbsp Unsalted butter
  • 6 oz Bittersweet chocolate
  • 1 cup Confectioners' sugar
  • 2 whole Eggs
  • 2 Egg yolks
  • 0.25 cup All-purpose flour
  • 1 for greasing Cooking spray
  • 1 scoop or dollop per serving Optional: Vanilla ice cream or whipped cream

Directions

Step 1

Preheat your oven to 425°F (220°C) and lightly grease four 6-ounce ramekins with cooking spray. Dust the ramekins lightly with flour and tap out any excess.

Step 2

In a medium-sized microwave-safe bowl, melt the unsalted butter and bittersweet chocolate together. Heat in 30-second increments, stirring after each, until smooth and fully combined. Let the mixture cool slightly.

Step 3

Add confectioners' sugar to the melted chocolate mixture and whisk until well incorporated.

Step 4

Whisk in the eggs and egg yolks until the mixture is smooth and glossy.

Step 5

Gently fold in the all-purpose flour using a spatula, being careful not to overmix.

Step 6

Divide the batter evenly among the prepared ramekins, filling each about three-quarters full.

Step 7

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are set but the centers are still soft and slightly jiggly.

Step 8

Remove the ramekins from the oven and let them stand for 1 minute. Run a knife around the edges of each cake to loosen it slightly.

Step 9

Invert each ramekin onto a small dessert plate and carefully remove the cake. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
