Ingredients

  • 180 grams Unsalted butter, softened
  • 200 grams Brown sugar, packed
  • 50 grams Granulated sugar
  • 3 pieces Eggs, large
  • 180 grams All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 200 grams Pitted dates, chopped
  • 150 grams Walnuts, chopped and lightly toasted
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat the oven to 175°C (350°F). Grease and line an 8x8 inch (20x20 cm) baking pan with parchment paper, leaving an overhang for easy removal.

Step 2

In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using a hand mixer or stand mixer until light and fluffy, about 2-3 minutes.

Step 3

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing.

Step 6

Fold in the chopped dates and toasted walnuts using a spatula until evenly distributed.

Step 7

Spread the batter evenly into the prepared baking pan. Use the back of a spoon or an offset spatula to smooth the surface.

Step 8

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Avoid overbaking to maintain a chewy texture.

Step 9

Remove from the oven and allow the bars to cool completely in the pan on a wire rack.

Step 10

Once cooled, lift the bars out of the pan using the parchment paper overhang. Cut into squares or rectangles and serve.

Step 11

Store any leftovers in an airtight container at room temperature for up to 5 days, or in the refrigerator for up to a week.
