Ingredients

  • 4 pieces Tilapia fillets
  • 1 cup Long-grain white rice
  • 2 cups Water or chicken broth
  • 1 cup Tomatoes, diced
  • 1 cup Black beans, drained and rinsed
  • 1 cup Corn kernels (fresh, canned, or frozen)
  • 1 cup Red bell pepper, diced
  • 0.5 cup Onion, diced
  • 2 tablespoons Cilantro, chopped
  • 1 piece Lime, juiced
  • 2 tablespoons Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Shredded cheese (optional, for serving)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Prepare four sheets of aluminum foil, each about 12x18 inches, and set them aside.

Step 3

Cook the rice: In a medium saucepan, combine 1 cup of rice and 2 cups of water (or chicken broth). Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.

Step 4

In a mixing bowl, combine the cooked rice, diced tomatoes, black beans, corn, red bell pepper, onion, cilantro, lime juice, 1 tablespoon of olive oil, chili powder, cumin, and half the salt and black pepper. Mix well to create the fiesta rice.

Place one tilapia fillet onto the center of each foil sheet. Drizzle each fillet with the remaining olive oil and season with the remaining salt and black pepper.

Spoon an equal amount of the fiesta rice mixture around each fillet, spreading it evenly around the fish.

Fold the edges of the foil up and over the fish and rice, crimping the edges tightly to seal and create individual packets.

Step 8

Place the foil packets onto a baking sheet and bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork.

Step 9

Carefully open the foil packets (watch out for steam!) and, if desired, sprinkle each serving with shredded cheese before serving.
