Ingredients

  • 500 grams All-purpose flour
  • 325 ml Warm water
  • 60 ml Olive oil
  • 7 grams Dry yeast
  • 10 grams Salt
  • 1 teaspoon Sugar
  • 250 grams Cherry tomatoes
  • 200 grams Mushrooms
  • 2 sprigs Fresh rosemary
  • 1 teaspoon Fresh thyme
  • 2 Garlic cloves
  • 0.5 teaspoon Black pepper

Directions

Step 1

In a large mixing bowl, whisk together the flour, dry yeast, salt, and sugar.

Step 2

Gradually pour in the warm water and 2 tablespoons of olive oil, then mix until a dough forms.

Step 3

Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

Step 4

Lightly oil a large bowl, place the dough inside, and cover it with a clean kitchen towel. Let it rise in a warm spot for 1-1.5 hours or until doubled in size.

Step 5

While the dough rises, preheat the oven to 200°C (400°F).

Step 6

Cut the cherry tomatoes in half and slice the mushrooms thinly. Mince the garlic.

Step 7

Line a baking sheet with parchment paper and toss the tomatoes, mushrooms, and garlic with 2 tablespoons of olive oil, thyme, black pepper, and a pinch of salt. Roast for 10-12 minutes until softened.

Step 8

After the dough has risen, grease a baking sheet or pan with 2 tablespoons of olive oil. Gently stretch the dough to fit the sheet.

Step 9

Use your fingers to create dimples across the surface of the dough, then drizzle the remaining olive oil evenly over the top.

Step 10

Arrange the roasted tomatoes, mushrooms, and garlic on top of the dough. Sprinkle the fresh rosemary leaves over it.

Step 11

Let the topped dough rest for 15 minutes while you preheat the oven to 220°C (425°F).

Step 12

Bake the focaccia for 20-25 minutes until golden brown and fragrant.

Step 13

Remove from the oven and allow it to cool slightly before slicing and serving. Enjoy!
