Preheat your grill or oven to 375°F (190°C). If using a grill, set it up for indirect cooking.
Remove giblets from the cavity of the chicken and pat the chicken dry with paper towels.
In a small bowl, mix the olive oil, minced garlic, paprika, salt, black pepper, dried thyme, and dried oregano to form a paste.
Rub the garlic and herb paste all over the chicken, ensuring an even coating, including under the skin for extra flavor.
Cut the lemon into quarters and place two quarters inside the cavity of the chicken for added aromatics.
Open a can of beer and pour out (or drink) half of the liquid. Use a can opener to remove the top of the beer can for better steam circulation, if desired.
Carefully lower the chicken onto the beer can so that the can is inserted into the cavity, and the chicken is upright with its legs acting as a tripod for balance.
Place the chicken (still upright on the beer can) onto a baking tray if using an oven, or directly on the grill over indirect heat if grilling.

Once cooked, use tongs and heatproof gloves to carefully remove the chicken from the beer can. Let the chicken rest on a cutting board for 10 minutes before carving.
