Ingredients

  • 600 grams Cooked chicken (rotisserie or boiled/shredded)
  • 2 whole Bananas
  • 300 ml Heavy cream
  • 100 ml Chili sauce (such as Heinz or ketchup with chili)
  • 150 grams Bacon
  • 50 grams Salted peanuts
  • 4 cups Cooked rice
  • 1 tablespoon Butter or cooking oil (for frying bacon)

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

Prepare the chicken by shredding or cutting it into bite-sized pieces. Spread the chicken evenly into a greased ovenproof casserole dish.

Step 3

Peel the bananas and slice them into approximately 1-cm (1/2-inch) thick rounds. Layer the banana slices on top of the chicken.

Step 4

In a mixing bowl, whisk together the heavy cream and chili sauce until fully combined. Pour this creamy mixture evenly over the chicken and bananas in the casserole dish.

Step 5

In a frying pan, heat the butter or cooking oil over medium heat. Fry the bacon until it is crispy, then chop it into small pieces or crumble it. Sprinkle the bacon over the creamy mixture in the dish.

Step 6

Sprinkle the salted peanuts evenly on top as the final layer.

Step 7

Place the casserole dish in the preheated oven and bake for 20-25 minutes, or until the top is golden brown and the dish is heated through.

Step 8

While the casserole is baking, prepare the rice according to package instructions if you haven’t done so already.

Step 9

Remove the casserole from the oven and let it rest for a few minutes before serving. Serve hot with the cooked rice on the side.
