  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 large carrots, diced
  • 2 large celery stalks, diced
  • 8 cups chicken or beef broth
  • 14.5 oz canned diced tomatoes
  • 1 leaf bay leaf
  • 3 cups baby spinach
  • 2 tbsp fresh parsley, chopped
  • 1 cup uncooked small pasta (e.g., ditalini or orzo)

Directions

Step 1

In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, milk, egg, minced garlic, grated Parmesan, dried oregano, salt, and black pepper. Mix until well combined but do not overmix.

Step 2

Shape the mixture into small meatballs, about 1 inch in diameter, and set aside on a parchment-lined tray.

Step 3

Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the meatballs in batches and sear until browned on all sides (they don't need to cook through at this stage). Remove the meatballs and set aside.
