Ingredients

  • 1.5 cups long-grain white rice
  • 2 tablespoons vegetable oil
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 3 cups chicken or vegetable broth
  • 2 tablespoons tomato paste
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.5 cup frozen peas (optional)
  • 2 tablespoons chopped fresh cilantro (for garnish, optional)
  • 4 pieces lime wedges (optional)

Directions

Step 1

Heat the vegetable oil in a large skillet or saucepan over medium heat.

Step 2

Rinse the rice under cold water in a fine-mesh strainer until the water runs clear. Drain well.

Step 3

Once the oil is hot, add the rice to the skillet. Stir frequently and toast the rice until it becomes golden brown, about 5-7 minutes.

Step 4

Add the diced onion to the toasted rice. Sauté for 3-4 minutes until the onion is soft and translucent.

Step 5

Add the minced garlic to the skillet and cook for 1 minute, stirring constantly to prevent burning.

Step 6

Stir in the tomato paste, diced tomatoes, cumin, paprika, chili powder, salt, and pepper. Mix well to coat the rice and vegetables evenly with the seasonings.

Step 7

Pour in the broth and stir to combine. Bring the mixture to a boil, then reduce the heat to low and cover the skillet with a tight-fitting lid.

Step 8

Allow the rice to simmer for 18-20 minutes, or until the liquid is absorbed and the rice is tender. Avoid lifting the lid during cooking.

Step 9

If using frozen peas, stir them into the rice during the last 5 minutes of cooking. Replace the lid and let them steam with the rice.

Step 10

Once the rice is cooked, remove it from the heat and let it sit covered for 5 minutes. Fluff the rice with a fork.

Step 11

Garnish with fresh chopped cilantro and serve with lime wedges on the side for an optional zesty kick.
