  • 4 pieces bone-in, skin-on chicken thighs

  • 8 cups chicken broth
  • 4 cups egg noodles
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large stockpot or Dutch oven over medium-high heat.

Season the chicken thighs with ½ teaspoon of salt and sauté them, skin side down, until golden brown (about 5 minutes per side). Remove the chicken and set aside on a plate.

In the same pot, add the diced onion, sliced carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until softened and fragrant.
